When Ritz-Carlton Millenia’s Greenhouse restaurant shut its doors, it was a tough act to follow. Greenhouse was often lauded as one of the island’s best buffet spreads, so it is fitting that Colony — the restaurant that replaces it — aims to up the ante with eight different live kitchens: each serving distinctive fare from Chinese, Indian, Indonesian, Malaysian and Western cuisines.
